Harvest Chocolate Cake

Pumpkin, cocoa and cinnamon add a seasonal twist to our popular chocolate cake mix

2 packages of American Quality Foods Chocolate Cake mix

1-1/4 cup pumpkin

2 Teaspoons cinnamon

2 packages of American Quality Foods Vanilla Whipped Frosting mix

Sugar-free Chocolate Chips (optional)

 

Mix cakes as instructed

Add 1 cup pumpkin and 2 teaspoons cinnamon.  Mix for an additional minute.  Place batter into half sheet pan (16 x 24) and bake in a conventional oven at 350 degrees for 23-24 minutes or until done.  In a convection oven, bake at 285 degrees for 18 - 19 minutes or until done.  Allow cake to cool

Prepare whipped frosting as instructed on the package.  Mix 1/4 cup pumpkin with 1/4 cup cocoa and fold into whipped frosting.  Spread on cooled cake.

Cake can be decorated with sugar free chocolate chips or a light dusting of cinnamon.
