Peach Upside-Down Cake

The taste of ripe peaches makes this dessert a refreshing and fun way to celebrate summer - no matter what time of year it is!

You will need:

1/2 package American Quality Foods Vanilla Creme Cake Mix

2 cups prepared American Quality Foods Peach Topping

1cup prepared, but liquid American Quality Foods Peach Gelatin

2 cups prepared American Quality Foods Peach Mousse

1 round spring form pan

To prepare:

Spread the peach topping evenly in a parchment lined and prepared spring form pan.  Mix the half package of cake mix with 2/3 cup of water, spread batter evenly over the peach topping.  Bake for 23 minutes at 350 degrees Conventional, 17-19 minutes at 290 degrees Convection.  After the cake has cooled for 30 minutes, remove outer ring of the pan.  Slice the top off the cake to have a flat surface, and replace the outer ring.  Using a skewer or similar tool, make several holes through the top of the cake.  Pour the prepared gelatin evenly across the top of the cake, allowing it to soak in.  Cover the cake and refrigerate until completely chilled.  When the cake is completely chilled, remove the outer ring and turn the cake upside down on  flat plate. Carefully remove the bottom portion of the pan from the cake.  Remove the parchment and frost the sides of the cake with Peach Mousse.  Load the remaining mousse into a pastry sleeve with a decorative tip, pipe the mousse around the top edge of the cake, and refrigerate.  Keep refrigerated until ready to serve.
