Fresh Fruit Tarts

1 package Lemon Cream Pie Mix
72 Graham Cookie Tart Shells
6 cups cold low-fat milk
2 cup cold water
Fresh berries and fruit



Yields: 72 tarts

Directions:
  1. Combine contents of Lemon Cream Pie Mixes with cold milk and cold water in the mixing bowl of a stand mixer. Stir by hand until all dry ingredients are wet. Immediately mix with whip attachment on medium-high speed for 2 minutes. Stop mixer and scrape down sides of bowl. Resume mixing on medium-high for 4 additional minutes.

  2. Insert a decorative tip into a pastry bag and fill approximately 3/4 full with cream pie filling (refill as needed). Pipe pie filling into each tart. Top each tart with a variety of fresh fruit and berries.
