Spring Fling Cakes

2 packages Sunburst Orange Cake or Pina Colada Cake Mix
1 package Whipped Topping Mix
2 cups chilled orange juice or 2 cups chilled pineapple juice
1 cup chilled water  



Recipe Yields:
30 Servings  

To Prepare:
  1. Prepare cake according to package directions. Spread batter into prepared half sheet or hotel pan and bake according to package directions.

  2. When cooled, split cake into 2 layers.

  3. Fill piping bag with Juice Infused Topping (see recipe below) and chill until ready to use.

  4. Cut cake 6x5 to yield 30 pieces.  Pipe Juice infused Topping between layers as well as on top.
To make Juice Infused Topping:
For Orange Sunburst Cake
  1. Add cold orange juice and cold water to Whipped Topping Mix in a mixing bowl and stir with a whisk until incorporated. Add this mixture to a stand mixer and whip for 6-7 minutes. Yields 8 cups.
For Pina Colada Cake
  1. Add cold pineapple juice and cold water to Whipped Topping Mix in a mixing bowl and stir with a whisk until incorporated. Add this mixture to a stand mixer and whip for 6-7 minutes. Yields 8 cups.
